Krispy Kreme Doughnut Fried Pizza Recipe: How I Tackled This Pizza Challenge!

This is What Happens When You Combine a Krispy Kreme Doughnut with a Pizza!

Everyone loves Pizza and Krispy Kreme Doughnuts...what happens when you combine the two?!
My friends over at Krispy Kreme were busy creating those famous light and delicious doughnuts one day when they thought, "I wonder if you can make a pizza out of this doughnut flour mix?" So they reached out and challenged me to make a Hawaiian pizza out of their mix. After a lot of thought and consultation with some pizza experts, I came up with a plan to make a fried doughnut pizza! Here is how I did it! (See video and recipe below)



The recipe below can be easily adapted to make your own Pizza Montanara (fried pizza) even if you don't have doughnut flour or don't desire to make a sweet crust!

The Recipe


To Make the Starter:
225 Grams Water
225 Grams 00 Flour (You can use bread flour too)
.5 Grams Instant Dry Yeast

1. Using a spoon or spatula, mix the flour and water together in a glass container (like a mason jar) until it has a pancake batter-like consistency.
2. Cover the container loosely with lid or cling wrap.
3. Leave at room temperature for 18 hours, and then refrigerate for 30 minutes before using. Pull out and allow to relax for 30 minutes before adding to dough primary mix (below)


The Primary Mix:


1000 grams Krispy Kreme Doughnut Mix (You can use cake mix)
100 grams 00 Flour (You can use bread flour too)
500 grams of cold water (55 to 60 degrees)
30 Grams of Salt
10 Grams of Instant Dry Yeast
450 grams of starter (from above)

1. Mix cold water, instant dry yeast, and salt in mixing bowl, preferably a stand mixer bowl.
2. After yeast is dissolved, mix in Krispy Kreme Doughnut Mix and Flour until it forms a smooth and loose dough.
3. Mix in the 450 Grams of starter and mix until smooth. If the dough appears and feels too wet or too dry, add small amounts of water or flour until dough reaches the desired consistency.
4. Refrigerate dough immediately for a minimum of 12 hours, maximum 24 hours.



Putting the Pizza Together:

1. Pull dough out of refrigerator 30 minutes prior to making pizza
2. Dust dough with flour and press into a 12" circle with a raised edge.
3. Heat oil in a pan (I used a 14" pan with roughly 4 cups of oil) or deep fryer to 350 degrees.
4. Place stretched dough into 350 degree oil and fry for approximately 1 minute, flip and cook for an additional minute.
5. Remove dough from oil after it reaches a deep brown color.
6. Place on pizza screen or on a pan to assemble. Add sauce, cheese, toppings
7. Cook in preheated oven t 450 degrees until cheese is melted and reaches desired level of crispness.
